"Viral" Baked Feta Pasta

Have you seen the viral TikTok baked feta pasta yet? When I saw it, I just had to jump on the trend for a few reasons: I love quick and easy meals that are also (somewhat) healthy and are great for meal prepping.

Since the viral video, many have attempted to make different versions of the pasta, and to be honest they all look so yummy! Pesto, burrata, goat cheese, zucchini, sausage are all variations, but I’ve decided to share one of those variations that uses the original ingredients, plus some additions.

Servings: 6 (about 625 calories per serving if using sausage)

Ingredients:

1 (7 oz) package feta

20 oz cherub or cherry tomatoes

Olive oil

1 tbsp white wine (optional)

Salt

Pepper

Crushed red pepper

1 lb ground hot Italian sausage (optional - see note for vegetarians*)

1 small package fresh basil, chopped

2 large handfuls baby spinach

2-3 minced garlic cloves or to taste

1 lb pasta of choice, I used farfalle

Parmesan, for serving


*for the vegetarians: you can simply omit the sausage OR add 1-2 chopped zucchini to your pan with the tomato and feta


Directions:

Preheat oven to 400. In a 9x13 pan, place the drained block of feta in the center and arrange the tomatoes (and zucchini if you’re vegetarian) around it. Coat everything with a few tbsp of olive oil and a dash of white wine, if using. Add salt, pepper, and crushed red pepper to taste. Bake for 30-35 minutes or until tomatoes begin to burst. While that is in the oven, break down and cook your sausage in a frying pan until fully cooked and browned. When you have about 15 minutes left on your oven time, bring a large pot of salted water to a boil and cook pasta until al dente. Your tomatoes and feta should be ready by now, so take that out of the oven and add your chopped fresh basil, a few handfuls of spinach, cooked sausage (if using), and minced garlic. Stir everything together and adjust seasoning, if needed. Now it’s time to add your drained pasta and mix it all together! Serve with parmesan cheese.
