The Best Fried Turkey Sandwich

If you're looking for a reason to fry a turkey, this is it. This was only my second time frying a turkey (but let's be honest, my boyfriend does most of the work) and I literally cannot stress how good it is. You will never look at a turkey the same way ever again.


But anyways... this recipe assumes that you have fried turkey. If you don't have fried turkey, I'm sure you can substitute for something else fried, like fried chicken, but it's just not the same. This recipe also assumes you have fresh sourdough, or maybe you're like me and decide to make your own bread. I'm sure whatever loaf you find at the grocery store will do just as fine but I do recommend somethjng thickly sliced so it doesn't fall apart.


The amounts below are approximate, I just did my own thing. Maybe you want to double the amount of brie (I won't judge), or forget the turkey altogether... just do what you like!



Servings: 4 sandwiches


Ingredients:

1 pint mixed berries, reserve a few for later (optional)

1/2 lemon, juice and zest

Fried turkey, sliced into thin strips (the amount per sandwich is up to you)

8 slices fresh sourdough

4 oz (or more) honey goat cheese

4 oz (or more) brie cheese

Butter or oil for the pan

Honey drizzle, optional

Fresh thyme, optional



Directions:

In a small saucepan over medium heat, add your berries, lemon juice and zest. Mash the berries with the back of a spoon and let it simmer for about 5-10 minutes, stirring occasionally, until the berries have started to break down to your liking (you're not making a jam). I don't add sweetener since there's already honey in the sandwich. Remove from heat and let it cool. Optional: stir in some whole berries while it's still warm. Warm a skillet and add a drizzle of oil or butter and get ready to assemble! Take 1 slice of bread and spread about 1 oz of honey goat cheese followed by 1 oz of thinly sliced brie, fried turkey, some of the berry mash, a drizzle of honey and a sprinkle of fresh thyme (if using), and top it with the second slice of bread. Place the sandwich in the skillet and let the cheese melt and bread start to crisp up to a golden brown. After a few minutes, add another drizzle of oil or butter to the sandwich, carefully flip and warm the other side. Remove from the skillet, cut in half, and enjoy it while it's hot and melty!
