The 2020 Holiday Cookie Giveaway

With the holidays approaching, I wanted to give back to my community while also doing something that I love: bake. If you follow me on social media you saw my post about giving away tins full of cookies, and in return, I just asked for people to make a donation to a non-profit of their choice.

I really enjoyed all of the baking and new recipes I tried. And while it was quite literally back-breaking to do all of this baking, it was great to see how much everyone appreciated what I had done and to hear about the non-profits that you all donated to. I wanted to share the recipes for the cookies I made, some of which are on my website, as well as any changes or substitutions that I made so you can re-create your favorite cookie at home! I'd love to hear which one(s) were your favorite in the comments. Here it goes...


- White chocolate peppermint. These were honestly my least favorite and I don't like the recipe so I'm not going to share it but I needed to mention them

- Cranberry orange shortbread, originally from mom on time out, but you can find the recipe here on my website

- Cookie dough truffles, a favorite, originally from baked perfection, but you can find the recipe here on my website

- Chocolate espresso cookies, originally from i am baker, but you can find the recipe here on my website

- Matcha white chocolate sugar cookies, a new recipe that I tried, is from Epicurious. I bought matcha off of Amazon and added a few more white chocolate chips (because you can never have enough chocolate)

- Triple ginger cookies, another new recipe, is from Taste of Home. I probably close to doubled the amount of crystallized ginger because some commented that the ginger flavor didn't come through enough, and they were absolutely perfect, soft and chewy

- Salted chocolate chip shortbread, another favorite, is originally from Bon Appetit and developed by Alison Ronan, but you can find the recipe here on my website. I prefer to use the chocolate chunks from Trader Joe's

- Espresso-hazelnut biscotti from Bon Appetit, but because I couldn't find hazelnuts, I used almonds. This recipe gives you a lot of "either or" suggestions so to simplify, I used Morton's salt, vanilla extract, and semi-sweet chocolate chunks from Trader Joe's. Did you know that biscotti in Italian just means cookie and it stands for twice baked?

- Last but not least, dark chocolate peppermint cake balls, which was actually something I created. For the chocolate cake and frosting, I used Hershey's back of the box recipe. For the cake (I used their regular cocoa) I added 1 tsp vanilla and 1.5 tsp peppermint extract. For the frosting (I used dark cocoa) I added 1/2-1 tsp of peppermint extract. Recipe will be posted on my website in the next few days.

I almost forgot to mention the pumpkin peanut butter dog treats! I included a small sample of these to those that have a 4-legged companion. You can find the recipe here on my website, but it's originally from Mom on Timeout.
