Yes, we are all quarantined and we all want to be able to say: I had no sugar today!
Well, got good news here: you can have a hearty and sugarless cake (call it bread, call it pie, call it sliced happiness, I'll call it Torta) that tastes perfect and is the perfect breakfast kick for another awesome day full of great ideas for the future aka how to make this planet a better place.
This whole recipe is in honor of one of my favorite public people on earth, the Doctor Franco Berrino, director of Epidemiology Institute and National Cancer Institute in Milan, Italy.
Very easy preparation, just a little longer list of ingredients than usual, but the result is very interesting. Try this on!
This recipe fits perfectly in an 8-inch loaf pan
Flour note: I used 1 cup Spelt flour, one cup All Purpose flour. It worked the best, I recommend to mix 2 different flours in order to get a good heartiness and 'rougher' texture. Spelt is good, sprouted, millet flour, brown rice flour will be good too. 100% All Purpose flour might get a little too boring, advice dropped! ;)
If you do not have Almond flour (who really does??), blend whole almonds in a blender. Easy!
Ingredients:
- 2 cups flour (see above about type of flours)
- 1 tsp Ground Cinnamon
- 1 tsp Baking Soda
- 1/2 cup Almond flour
- 1/2 lemon zest
- 2/3 cup pre-soaked raisins
- 113 grams apple sauce (usually one container), can be substitute with 1/2 cup apple juice (all natural)
- 1/2 tsp Vanilla extract
- 1/2 tsp lemon juice
- 1 1/3 cups blended carrots
- 2 tbsp oat milk / almond milk / soy milk (your choice)
- 1 cup water
- 1/2 cup roughly chopped pecans or walnuts or hazelnuts (whatever you have)
- 2 apples, 1 chopped and 1 peeled and sliced
- 2 tbsp EVOO OR Coconut Oil
- pinch of sea salt
Directions:
Preheat oven at 350.
Mix flour with cinnamon, salt, lemon zest and almond flour.
Separately mix all the other ingredients, mixing separately just baking soda and lemon juice (yes, it does react and it's awesome).
Carrots can be easily blended in a mixer or food processor, save half a carrot roughly chopped to have bigger chunks in the dough.
Mix all ingredients together and knead with a big spoon for about 4-5 minutes. The dough is pretty sticky and that's ok. Add one small chopped apple, slice the other for topping (peal the topping apple or the skin will taste burned and weird).
Oil a 8 inch loaf pan with vegetable oil or coconut, place the dough in the pan. Cook for 35-40. Let it cool down before serving.
