I love a good fried rice but I haven’t found a tasty recipe until now. I actually came up with this idea on a whim when I was at the grocery store and found pre-packaged uncooked Chinese Style Char Siu (BBQ) Pork by Winchester Farms, which I have never seen before. It was also low in fat so I was excited to give it a try! I loved it so much I went back and bought 2 more packages to bring home and freeze for later use. If you can’t find this at your store, here is a recipe to make it yourself.
You can make this fried rice with or without pork and the steps are the same. I’ve written out steps to make the rice in an Instant Pot but you can cook the rice any method you’d like. Just don’t forget to rinse the rice before cooking.
1 serving is a full meal (for me) so if you plan to make this as a side dish you can probably get 6 servings out of this recipe. It is easily doubled.

Ingredients (Instant Pot rice):
1 1/2 cups dry long grain rice (I used jasmine)
3 cups water
1/2 tbsp butter
Pinch of salt
Ingredients (fried rice):
Prepared rice
7-8 oz Chinese Style Char Siu Pork by Winchester Farms*
1 tbsp sesame oil
1/2 white onion, diced
1/2 cup frozen peas and carrots
1 egg, lightly beaten
2 tbsp soy sauce
Scallion for garnish
*Package is 1 lb total including sauce. The cooked meat weighed about 12 oz. I found 7-8 oz to be a good amount but you can add more or less.
Directions (Instant Pot rice):
Rinse your rice in water, strain. Add all ingredients into an Instant Pot and PRESSURE COOK on high for 5 minutes. Let it vent naturally. Uncover and transfer to a bowl. Alternatively, you can cook the rice any method you’d like.
Directions (fried rice):
Cook pork according to packaged instructions. Once cooked, finely dice and set aside.
In a large skillet heat your sesame oil on medium heat. Add onion and frozen vegetables. Once tender, push them to one side of your skillet. Add the egg and using a spatula, beat the egg until it starts to cook. Combine the egg with your vegetables. Add your rice and soy sauce mixing everything together. Add your chopped pork and mix. Taste and add more soy sauce if needed. Serve with diced scallions if desired.
