Non-Traditional Poké Bowl

Poké is a traditional Hawaiian dish made of diced raw fish and served with condiments and sometimes sides such as seaweed salad, kimchi (kimchee), and mac and cheese (I'm not sure how traditional these are though!). In recent years, you may have seen a surge in fast-casual food restaurants opening up in your town and serving poké. One of my favorite on the east coast is Manoa in Somerville, MA and it reminds me of the poké I had in Hawaii, plus everyone who works there is extremely friendly. They are offering curbside delivery and home delivery on Saturday & Sunday during the COVID-19 pandemic (this is not a sponsored post, I just really love them).


Because I crave poké on a daily basis and I don't have easy access to raw fish, I came up with my own non-traditional version that satisfies my craving and uses what I have on hand. It's a great meal to "clean out the fridge" because you can add any veggie or side of choice, so have fun with it and I'd love to see what you create!

Ingredients (bowl) per serving:

1 cup cooked white or brown rice (can sub for quinoa)

1 large handful spring mix

1 radish, thinly sliced

1/4 cup sliced tomato

1/4 large cucumber, sliced

1/4 cup shredded carrot

1/4 diced avocado

1 scallion, chopped

7 large cooked shrimp, thawed*

1.5 oz smoked salmon*

1/4 cup kimchi (kimchee)**

Sesame seeds or Furikake for topping (optional)


*If you are vegan/vegetarian, sub seafood with some simple pan-fried tofu (press and slice, then season with salt and pepper and lightly fry in a pan with oil). I've had it both ways and they are equally delicious.


**not all kimchi (kimchee) is vegan/vegetarian, please check the label if that is a concern. You can also omit or pickle your cucumbers or radishes if desired.


Ingredients (dressing) for 3 servings:

2 tbsp soy sauce or Coconut Aminos

2 tbsp rice vinegar

1 tbsp olive oil

1 tsp toasted sesame oil

Juice from 1/2 lime (about 1 tbsp)

1/2 tsp black pepper


Directions:

Combine all ingredients in a bowl and top with about 2 tbsp of dressing and sesame seeds or Furikake. Enjoy!
