I combined some of my boyfriends's favorite things: chocolate, mint, and brownies, to create these mint chocolate energy bites that are healthy, provide a boost of energy, and taste like a mint chocolate brownie without unnesecary fats and sugars. There are a few variations to this recipe so check out the original recipe from ambitious kitchen if you need ideas!
Servings: about 14 (1 oz/28g per bite)
Ingredients:
1 cup (4 oz) raw walnuts
1 cup (8 oz) pitted mejdool dates
3 tbsp unsweetened cocoa powder (dark preferred)
1 tsp vanilla extract
1/4 tsp mint or peppermint extract
1 tbsp chia seeds (optional)
1 scoop chocolate protein powder (optional)
Pinch of salt
Cocoa powder for dusting (optional)
Directions:
Pulse walnuts and dates in a food processor until they are fully combined. Chunks of walnuts are fine! Add the remaining ingredients and pulse until a dough forms. Dough should be thick and clumpy. If not, add a dash of warm water. Using a scale or small cookie scoop, measure out 1 oz (28g) of dough and roll it into a ball. Place on a sheet lined with parchment paper and place in the fridge for 30 minutes or until chilled, then dust with cocoa powder (optional) and transfer to a container or ziplock back and store in the fridge.
