Keto Smoked Salmon Sushi

Sushi is one of my favorite foods and I eat (store-bought) sushi at least once per week. You can imagine my sadness at the thought of having to cut sushi from my diet for the short term as I try keto. However, for all my sushi-loving friends who are doing keto, I think I found a winner with this recipe!


This recipe is great as a meal or as a snack throughout the day if you cut it in half.



Servings: 1 roll (6-8 pieces)


Ingredients:

4 oz smoked salmon

2 oz cream cheese, cut into thin blocks

25g avocado, cut into thin strips

35g cucumber, julienned

Sesame seeds, for garnish

Soy sauce, for dipping (optional - adds carbs)


Directions:

On a piece of Saran Wrap or sushi mat covered in Saran Wrap, lay out your smoked salmon so that it forms a rectangle. Place your cream cheese on top of the salmon along the long end towards the bottom edge leaving about 1/2" of space from the edge. Add your avocado, cucumber, and sprinkle in some sesame seeds. Roll tightly, then place the roll in the refrigerator for about 1 hour or up to 3 days to set. When you are already to eat, remove your roll and place it on a cutting board. Cut into 6-8 pieces, enjoy them as-is or dip them in soy sauce (this will add some carbs).
