Keto Sausage and Pepperoni Pizza

This is one of our favorite keto recipes so far! I make it at least once per week. Even if you're not on keto, I highly recommend giving this low carb pizza a try. I would use the term "pizza" loosely to describe this meal, it's more like a casserole or lasagna with pizza flavors.


As always, with keto, be mindful of the amount of sugar (carbs) listed on the ingredients you purchase. Rao's brand of sauce is low in carbs compared to othe popular brands. I also recommend a high quality sausage if you don't mind paying a little extra, it really makes a difference!

Ingredients:

14oz chopped cauliflower florets

2 lbs sausage of your choice, casings removed*

1 medium green bell pepper, diced

8 oz baby bella mushrooms

1-2 tbsp olive oil

2 cups whole milk shredded mozzarella

3 oz pepperoni

1 1/5 cups low carb marinara sauce (Rao's)

1/4 cup shredded parmesan cheese mixed with 1/2 tsp Italian seasoning

Olive oil spray


*I use a Vermont brand of sausage that essentially has equal parts fat and protein and 2 packages comes in just shy of 2 lbs. The macros are based on the sausage I use. Other sausage (such as McKenzie) has a very high fat to protein ratio.


Directions:

Preheat oven to 400 and spray a 9x13 pan. Steam the cauliflower until soft but not falling apart. I do this by placing the cauliflower in a microwave safe bowl, adding about 1/2 cup of water, covering and microwaving for about 5-7 minutes. You can also steam on the stove or in an Instant Pot. Allow cauliflower to drain. Meanwhile, in a medium skillet, break down the sausage into bite sized pieces and cook until fully cooked through and starting to brown, 5-7 minutes. Move your cooked sausage to a large bowl. Add 1-2 tbsp of olive oil to the same skillet and cook your mushrooms for about 3-5 minutes or until soft. Add your bell pepper, sausage and cauliflower to the pan with the mushrooms and and give it a quick sauté. In your 9x13 pan, spread about half of your sausage mixture into an even layer. Spoon about half of your marinara sauce followed by half of your shredded mozzarella, then a layer of pepperoni. Repeat. Finally, sprinkle your parmesan mixture on the top. Bake for 25-30 minutes or until cheese is melted amd bubbly. Let it briefly cool before serving.
