Keto Clam Chowder

I find a creamy bowl of chowder so comforting, so when I found a keto version, I knew I just had to try it. And let me tell you, I was not disappointed.


The addition of sausage and mussels makes this a hearty, delicious meal, and you won't even realize there aren't any potatoes!



Servings: 6 bowls. Approx. 593 calories | 42g f | 14g c | 40g p (includes mussels)


Ingredients:

6 slices bacon

2 tbsp butter

1 tbsp minced garlic

1 medium yellow onion, diced

4 oz ground sausage or chorizo, casings removed

1/2 tbsp fresh thyme

2 cups heavy cream

2 cups seafood stock

2 10 oz clams in clam juice (reserve clam juice(

1 bay leaf

2 cups celery root, diced

1 package (about 8-9 oz) fresh-frozen mussels (optional), defrosted

2 tbsp fresh parsley

Salt and pepper


Directions:

In a large pot, fry your bacon until crispy. Remove and set aside to drain leaving the grease in the pot. In the same pot over medium-high heat, add your butter, garlic, onion, sausage or chorizo if using, breaking it up into small pieces, and thyme. Once the onions begin to soften and meat is starting to brown, add the cream, stock, clam juice, bay leaf, and celery. Bring to a boil, then lower the heat and bring to a simmer for 15 minutes or until the celery root softens amd broth reaches your desired consistency. Add more heavy cream to thicken or stock to thin. Finally, add your clams and mussels, season to taste, and cook for a few minutes. Serve with bacon amd fresh parsley.
