I took a quick break from keto while on vacation, but now I'm home and looking forward to getting back on track! I was looking for something that I could make in under an hour and would require very little prep, and that's when chili came to mind. While I have made many types of chili before (chicken, beef, venison), I have never made one that used two different types of meat (beef and pork sausage) so this recipe caught my eye.
When it comes to keto (or most diets in general), checking the labels is important! Make sure you are choosing products that contain very little to no added sugar.
Servings: 6 bowl. Approx 445 calories | 30g f | 16g c | 28g p without toppings
Ingredients:
2 tbsp olive oil
1 medium yellow onion, diced
3 garlic cloves, minced
1 lb ground beef (80-85%)
1 lb pork sausage, casings removed
1 poblano pepper, diced
1 medium red bell pepper, diced
3 tbsp chili powder
1 tbsp smoked paprika
1 tbsp cumin
1 tsp salt
1 28oz can whole tomatoes
1 tbsp diced chipotle pepper in adobo sauce
2/3 cup beef broth
2 tbsp tomato paste 2 tbsp buffalo hot sauce
1 tbsp apple cider vinegar
2 bay leaves (optional)
Optional Toppings:
Sour cream
Cheese (I like whole milk mozzarella)
Avocado or guacamole
Jalapeños
Cilantro
Lime
Hot sauce
Directions:
Turn your instant pot to the sauté function, add oil, then sauté onions and garlic for about 2 minutes. Add in your ground beef and or sausage, breaking it down ito small pieces with a spoon or spatula. Cook until almost cooked through, 5-7 minutes. Add in the diced poblano and bell pepper, then your spices, and stir and cook for another 2 minutes. Turn off the sauté function. Add your broth and stir/scrape so that nothing is sticking to the bottom of your pot. Pour in the whole tomatoes, chipotle peppers, tomato paste, buffalo hot sauce, apple cider vinegar, and bay leaves if using. Stir and close the lid. Pressure cook on high for 12 minutes, then manually release the pressure. Remove the lid and let it sit for about 10 minutes. Serve and top with your preferred toppings. Chili is usually better the next day!
