Individual Raspberry Protein Cheesecakes

These are quite the treat when you’re craving something sweet without* the calories! I normally don’t like cheesecake but LOVE raspberries and dark chocolate so I had to give them a try, and I’m so glad I did! I sometimes have these in place of a protein shake or simply as a snack.

*Just to clarify, these are LOW calorie high protein cheesecakes.


Servings: 6 cheesecakes


Ingredients (cheesecake):

4 oz (1/2 cup) low fat cream cheese, room temp

1/3 cup non-fat plain Greek yogurt

1 egg

1/2 tsp vanilla

1/2 lemon, juiced

2 tbsp honey or maple syrup

1/8 tsp salt 30-50g vanilla protein powder (I use 50g)


Directions (cheesecake):

Preheat oven to 375 and either line a muffin tin with liners or spray with cooking spray. In a medium bowl combine cream cheese, yogurt, egg, vanilla, lemon juice and honey. Add in salt and protein powder, mix until you form a batter. If the batter is too thick, add more lemon juice. Fill each liner nearly to the top. Bake for 20-24 minutes or until the top cracks and is lightly golden. Cool in the tin (the center will sink a bit), they will be easier to remove that way.


Ingredients (topping):

3/4 cup frozen raspberries

1 tsp honey

Squeeze of lemon

1/4 cup granola (I use Nature’s Promise Protein Dark Chocolate)

Directions (topping):

In a small skillet over medium heat add raspberries, honey and lemon juice. Stir regularly until you reach a jam-like consistency (it won’t be too thick). Add a spoonful to each cheesecake, then top with your favorite granola. Eat at room temperature or straight from the fridge.
