This is a healthier version of a bowl you might order at Chipotle or similar restaurant. The great thing about this is you can pick and choose what you want to add to your bowl based on your personal preference and nutrition goals.
Before attempting this recipe, please note that the chicken requires an Instant Pot. If you don’t have one, you can make any style chicken you like (I recommend a Mexican style recipe). I’ve also included a list of suggested toppings for your bowl. My personal preference is pictured below.

Ingredients (chicken):
- 2-2.5 lbs boneless skinless chicken breast
- 1 tbsp cumin
- 1 tbsp oregano
- Salt, to taste
- Black pepper, to taste
- 1/2 tsp chili powder, or to taste
- 2 tbsp olive oil
- 1 yellow onion, diced
- 6 garlic cloves, minced
- 1/3 cup low sodium chicken broth
- 1/4 cup orange juice, no pulp
- 1/4 cup lime juice
Ingredients (burrito bowl):
- Cooked rice or grain of choice
- Romaine lettuce
- Low sodium black beans
- Pico de gallo (or make your own with tomato, white onion, jalapeño and cilantro)
- Avocado
- Non-fat plain Greek yogurt (healthier) or sour cream
- Jalapeño
- Cilantro
- Scallion
- Other options: corn, cheese
Directions:
Combine your spices (from cumin to chili powder) in a small bowl. Rub spices onto both sides of your chicken breast. Turn your Instant Pot on to SAUTE and add 1 tbsp of olive oil. Working in batches, brown your chicken on both sides and set aside. Add remaining olive oil to Instant Pot if needed. Add the onion and garlic, cooking until fragrant. Deglaze your pot by adding chicken broth, then your orange juice and lime juice. Bring to a simmer. Return chicken to the pot and PRESSURE COOK on high for 15 minutes. Natural release. Remove chicken from the pot and shred on a cutting board or bowl. OPTIONAL: turn oven on to BROIL (high) and line a sheet pan with parchment paper or spray with oil. Add the shredded chicken with 1/2 cup of your Instant Pot marinade. Broil for 5 minutes, stir, then broil for another 5 minutes. Now your chicken is ready to eat!
For the burrito bowl I like to start with rice on the bottom, then lettuce, then chicken, beans, pico de gallo, etc. Eat it however you like!
