These matcha pancakes are going to be a staple breakfast recipe for me. Inspired by a lot of the matcha recipes I have been seeing online, this is another recipe that I can't really give credit to anyone for. I have been eating pancakes 1-2 times a week so I just took ingredients I already had on hand and created something new.
I typically don't use boxed pancake mixes but I like the Kodiak brand because of the added protein so I feel a little less guilty consuming their products. Plus I like the taste and variety of their offerings. This is an official request for Kodiak to sponsor me :)
Servings: 1 stack of 3-4 pancakes
Ingredients (pancakes):
1/2 cup (63g) Kodiak Protein Buttermilk Pancake Mix
1 egg
1 tsp matcha powder
1/2 cup Silk protein
Butter or oil for skillet
Ingredients (blueberry jam);
2 oz blueberries
1 tsp chia seeds (optional)
1/2 tsp sugar (optional)
Squeeze of lemon
Maple syrup for servings
Directions (pancakes):
Combine all ingredients except for butter in a small bowl and whisk vigorously until a batter forms and matcha is no longer clumpy. Heat a skillet over medium heat and add some butter, and start your blueberry jam (see directions below). Once the butter is hot and bubbly, pour batter into the skillet in order to make a 4" round pancake (should make 3-4 pancakes total). Flip pancake once bubbles start to form on the top and the underside is golden but not burned. Cook for another 1-2 minutes until the pancake is cooked through (I like mine a little gooey), then transfer to a plate or heated serving dish until all pancakes are done.
Directions (blueberry jam):
In a small saucepan over medium heat add all of your ingredients minus the maple syrup. Stir occasionally making sure the bottom of the pan doesn't burn. Take a spoon and mash some of the blueberries to your liking. Once you get your desired consistency, remove from heat and wait for the pancakes to be ready.
Once pancakes are ready, top with your blueberry jam and maple syrup or topping of your choice.
