Blackberry Compote

Blackberry compote pairs nicely with a variety of foods such as waffles, ice cream, oatmeal and yogurt, but it can also be eaten on its own. Compote, not to be confused with jelly or jam, is essentially a syrup or sauce made by boiling and mashing fruit in a simple syrup (sugar water) mixture. What I like about this recipe is that you add 1/4 cup of berries towards the end of the cooking process so you get both mashed and whole berries in the compote.

Ingredients:

1 1/4 cup (12 oz) fresh blackberries, divided

3 tbsp red grapefruit juice or lemon juice

2 tbsp sugar

2 tbsp honey

Pinch of salt


Directions:

Combine 1 cup of blackberries, grapefruit or lemon juice, sugar, honey and salt in a medium sauce pan over low to medium heat. Cook for 5-7 minutes, stirring occasionally, then smash the blackberries with the back of your spoon. Add remaining 1/4 cup of blackberries and cook for another few minutes (1-2 or to your liking). Take off the heat and let it cool and thicken slightly. Serve warm or cold. Compote is not meant to be preserved like a jelly or jam.
