Birria: Grilled Pizza and Ramen

I've been a big fan of @turkuazkitchen on Instagram and when I saw her reel on how to make pizza and Birria, I just KNEW I had to try it. I honestly don't know much about Birria but from a quick google search it's a traditional Mexican soup or stew made with goat meat. Well, this isn't made with goat meat.


I made this Birria to go with a grilled pizza originally but we had SO MUCH left over that we used it for ramen. This recipe focuses on how to make the Birria but at the end you can read the simplified process on how to use the Birria for grilled pizza and ramen. New to grilling pizza? Servings: a lot


Ingredients:

4 lb chuck roast

2 tbsp olive oil

1 yellow onion, diced

4 garlic cloves, minced

3-5 guajillo chilis

1 cup diced tomato

1 tbsp tomato paste

2 cups beef stock (or water)

1 tsp oregano

1 tsp ground cumin

1 tsp chili powder

Salt and black paper


Directions:

Soak your chilis in warm water for 15 minutes then remove the seeds. Season your chuck roast with salt and pepper. In a large pan (cast iron is recommended), heat 1 tbsp oil on high, then sear both sides of the chuck roast. Transfer chuck roast to a pressure cooker or Instant Pot. If you have the metal tray that goes into the Instant Pot, use that. In the same pan you used for the chuck roast, add remaining oil, then sauté your chopped onions for 1-2 minutes. Add the garlic, tomato paste, diced tomatoes, chilis, and the spices. Sauté for 1-2 minutes then pour the mixture into your pressure cooker. Add your beef stock or water. Close the lid and PRESSURE COOK on high for about 1.5 hours (it's about 20-25 minutes per pound). After it is done, release the pressure, take off the lid, and remove your chuck roast and place it into your cast iron pan and (optional) broil on high for 1-2 minutes. Remove about 1-2 ladles of the broth, blend, then pour it over the roast and start to pull it apart. Reserve the extra broth for either grilled pizza or ramen - see directions below.

If you're using the roast for GRILLED PIZZA (pictured above):

  • Follow my guide for grilling pizza

  • Use blended broth as the base (instead of sauce) then add shredded mozzarella followed by the Birria and red onions. Since the broth is very brothy, I poked some holes in my crust after the first grill session so it would seep into the crust

  • Once the pizza is done cooking and cheese has melted, add fresh cilantro and slice!


If you're using the roast for RAMEN:

  • Add remaining beef stock (about 2 cups) to the Birria broth and blend

  • Bring your broth to a boil, add mushrooms (if using)

  • Add cooked noodles to a bowl and ladle some of the hot broth on top

  • Top with veggies, soft boiled egg, the Birria and whatever else you want to add
