I used to hate overnight oats until someone suggested I heat them up in the microwave before eating them, and my mind has been blown every since. I've been a die-hard "eggs for breakfast" person for years so the fact that I've been eating overnight oats pretty consistently for the last 3 months is all you need to know. Making these ahead of time has also cut down my morning routine by about 15 minutes because I can just grab and go. So for all of you who skip breakfast because you don't have the time, let me change your life with the one recipe that I just cannot get enough of: Berry Chia Overnight Oats.
Ingredients (per serving):
1/2 cup rolled oats
1 tsp vanilla
1/2-2 tsp maple syrup or honey, to taste (optional)
1/2 tbs chia seeds
1 tbs almond butter*
1/2 pint berries of your choice, pick any 2 of the following: blueberries, blackberries and raspberries
1 cup almond milk
*I've been using Barney Almond Butter, which I get at Market Basket. I find it to be more affordable that other brands of almond butter. I prefer the smooth texture one.
Directions:
Combine all ingredients into a jar and chill overnight. You can make 4 servings at once or make each one the night before. I like to make them all at once so I don't have to get all of the ingredients out each time. You can eat them cold but my preference is to warm in the microwave for 1-1.5 minutes.
