One of the perks of staying at the Royal Hawaiian hotel in Oahu, Hawaii is their banana bread, delivered to your room upon arrival. I've never personally had it - nor do I particularly enjoy banana bread - but my stepmom and dad frequently ask me to re-make their recipe (they'll give you a recipe card) as a reminder of their stay at this hotel.
I decided to make muffins instead since they're easier to share but if you do choose to make the bread you'll need a loaf pan and your baking time increases to about 1 hour. Careful not to over-bake them!
Ingredients:
1 cup of sugar
2 eggs
1/2 cup vegetable oil
4-5 ripe bananas, mashed
2 cups flour
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla
1/2-1 tsp cinnamon or to taste
1/2 cup macadamia nuts, chopped
Directions:
Pre-heat oven to 350 and line 24 muffin tins. Combine sugar, eggs and vegetable oil. Add the mashed banana and mix well. Mix in flour, baking powder, baking soda, salt and vanilla until a tick batter forms. Stir in nuts. Fill muffin liners 2/3 of the way full. Bake for 30-35 minutes or until a toothpick emerges clean. Let cool a few minutes before transferring to a wire rack.
