I feel silly posting a recipe for avocado toast because it's such a simple thing to make and there are so many variations to the recipe. As any millennial will tell you, avocado toast is THE thing to have these days and most cafes and some restaurants carry it on their menu. I like my recipe because it's simple to make, and you can enjoy it with just the avocado or create an ultimate avocado toast by adding smoked salmon and egg. Avocado toast has been a life-saver while I'm undergoing a kitchen renovation because it only requires a toaster and I can soft boil a few eggs ahead of time at my grandparent's house and save them for dinner throughout the week.
Ingredients:
1 "teeny tiny" avocado or 1/2 regular avocado, ripe
1-2 tsp fresh lemon juice
1 tbs olive oil
Salt & pepper (you can also use lemon pepper)
Hot sauce (optional)
Smoked salmon*
Everything But the Bagel seasoning
1 egg, soft boiled, poached, or fried
1 thick slice of bread (I've really enjoyed Dave's Killer Bread "Good Seed" but typically use Ezekiel sprouted grain bread)
*Trader Joe's recently introduced "Everything But the Bagel Seasoned Smoked Salmon", which I highly recommend! Otherwise you can buy smoked salmon and their seasoning separately - it's probably a bit cheaper to do this.
Directions:
Mash avocado with lemon juice, olive oil, salt and pepper and hot sauce if using. Adjust to taste, I like mine slightly tart and salty. Cook your egg to your preference. If you are soft boiling, I recommend adding 1 tbs white vinegar to the boiling water to make the egg easier to peel. Toast your bread. Place mashed avocado, 2-3 slices of smoked salmon, and your egg on top of your bread. Season to taste and enjoy for breakfast, lunch, dinner, or a snack!
