Egg White Breakfast Sandwich

If you know me at all, you know that breakfast is my favorite meal of the day. My boyfriend recently started a new work out routine that also included a meal plan. He received a recipe book, and it contained a recipe for the ultimate breakfast sandwich, so I was immediately intrigued...

This sandwich is a beast. I had to cut down on the amount of egg whites and now only use 1 cup. I like it so much that I have it almost every morning, unless I'm running late for work, that is. I usually don't add tomato or ham to it because I like the taste of eggs and hot sauce, however, you have the option to add those ingredients if you wish. My food app calculated that this sandwich is 373 calories (without tomato or ham).

Ingredients:

1 to 1 1/4 cup (5-6 eggs) egg whites

1 cup spinach

2 slices of tomato

2 slices of ham (optional - omit if vegetarian)

2 slices of Ezekiel bread, toasted

Hot sauce, to taste

Salt and pepper, to taste

Pam cooking spray

Directions:

Spray a small skillet with Pam cooking spray. Add spinach and cook for a few minutes until it begins to wilt. Add in your egg whites and cook until no longer runny. I fold it over as if I were making an omelette. Add salt and pepper to taste. Cut your "omelette" in half. Toast your bread and add a slice of tomato and half of your "omelette" to each slice of bread. Top with hot sauce of your choice.
