What do you make with your left over ingredients from making Soba Noodle Spring Rolls? Soba noodle salad with peanut dressing, of course! It's a great way to kick off your New Year's resolution of eating healthier. I could honestly eat this 3x a day, every day. Even if you haven’t made spring rolls it’s worth getting the ingredients to make this refreshing and filling salad!
These are some of the ingredients you should have for your salad (either left over from the spring rolls or bought specifically for the salad):
- soba noodles
- shredded carrots
- scallions
- cucumbers
- lettuce or baby spinach
- some sort of protein or combination of: chicken, shrimp, tofu, hard boiled egg
- red bell pepper
- cilantro
You should also have all of the ingredients for making the peanut dressing if you made the peanut dipping sauce for the spring rolls. Otherwise, most of the ingredients you probably have in hand already!
Servings: 8
Ingredients (Peanut Dressing):
5 tbsp peanut butter
5 tbsp water
5 tbsp soy sauce
1-2 tbsp sesame oil
2 tbsp honey
juice of 1 lime
1 clove garlic, minced
1/4 cup chili such as sriracha, or to taste
1/8 cup peanuts (optional)
Directions:
Combine all ingredients minus the whole peanuts in a food processor and blend until you reach your desired consistency. Add peanuts and blend some more. Pour over your soba noodle salad and mix. Refrigerate extra dressing for later use.
Cook your soba noodles according to packaged instructions. Drain and top with your protein and veggies then add some of your peanut dressing. This salad is best served with cold soba noodles.
