This is what dreams are made of. When I first stumbled upon this recipe, my first reaction was "what?!". But the pairing of kimchi, turkey or avocado, sriracha and cream cheese is simply out of this world.
I bought kimchi from Trader Joe's, which seems to be one of their relatively new items in the refrigerator section. I hope they keep this item stocked! I find it at regular grocery stores either near the tofu or where you buy pre-made foods. For those new to kimchi, it is a traditional Korean dish made of fermented vegetables. The one I used was fermented napa cabbage and radishes. If you are vegan, just make sure to buy vegan kimchi. They exist but can be harder to find.
Ingredients (makes 2):
1/2 cup kimchi, drained
1/4 cup cream cheese or GO VEGGIE! if vegan
4 slices marble rye or sour dough
4-6 slices turkey (substitute with avocado if vegan)
1/2 avocado, optional
1/2 tbsp sriracha, or more to taste
Country Crock almond oil butter or regular butter
Directions:
In a small bowl, combine cream cheese and sriracha until incorporated. Spread two slices of bread with cream cheese. Add kimchi, turkey and/or avocado (pictured is without avocado) to one slice and cover with remaining slice. Spread butter onto both sides of the sandwich and place one side on a grill pan or skillet. Toast each side on medium-high for 3-4 minutes, making sure it doesn't burn. Serve while warm. Pairs great with potato chips.
