The star of this recipe? The tequila-lime frosting. I have never had anything like it.
I made these for Cinco de Mayo (of course) but I'm a bit late posting the recipe. Oops. It's been a busy couple of weeks and I just haven't found time to post any recipes. Just because Cinco de Mayo has passed does not mean you shouldn't try these out! They would be great for any sort of party.
Disclaimer: I had some problems with the baking time the first time I made them. I put them in for 25 minutes as the recipe suggested and they came out a little too brown. I used white cupcake liners and they burned, so I took them off to make them look nicer. The honestly still tasted very good - batter was dense and the tequila/lime flavor came through in the cupcake and especially in the frosting. Definitely recommend this recipe, just make sure to check them when they're in the oven.
Ingredients (cupcakes):
1 1/2 cups flour
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup butter, room temp
1 cup sugar
2 eggs
1 1/2 limes, zested and juiced
2 tbs clear tequila, plus more for brushing
1/4 tsp vanilla
1/2 cup buttermilk
Ingredients (frosting):
1 cup butter, room temp
2 1/4 cup powdered sugar
1 tbs lime juice
2 tbs white tequila
Directions (cupcakes):
Pre-heat oven to 325 and line 12 muffin tins. In a medium bowl, combine flour, baking powder and salt and whisk together with a fork. In a large mixing bowl, beat butter and sugar on medium-high until pale and fluffy, about 5 minutes, scraping the sides of the bowl when necessary. Reduce speed to medium and add eggs, one at a time, and mix until combined. Add lime zest, lime juice, vanilla and tequila and mix until combine (batter may look like it's curdling, but that's ok! It will come together). Reduce mixer speed to low and add flour mixture in three batches, alternating with buttermilk in two batches. Mix only until flour mixture is fully incorporated. Divide batter among muffin cups and bake for 22-25 minutes or until a cake tester inserted in the center comes out clean. Allow cupcakes to sit for 5-10 minutes before brushing each with 1-2 tsp of tequila. Allow cupcakes to cool completely before frosting them.
Directions (frosting):
Whip butter on medium-high for 5 minutes. Reduce speed to low and gradually add in powdered sugar. Increase speed to medium-high and whip for 30 seconds. Add the lime juice and tequila, and beat on medium-high for 3 minutes or until frosting appears fluffy.
