I love easy dinners that are both healthy and delicious, which is funny because this recipe comes from a website called Healthy Delicious... Anyways, I was skeptical about how this recipe would turn out, but I was pleasantly surprised. It was very flavorful - if you like lemon - and filling because of the gnocchi.
I'm thinking I may bake gnocchi in the oven more often. They turned out crunchy on the outside and soft on the inside with a mild lemon flavor, and I had to stop myself from eating them all in one sitting because they were so good!
Ingredients:
1.5 lb boneless, skinless chicken thighs
16 oz gnocchi
2 lemons, 1 juiced and 1 thinly sliced
2 tbsp oil
1 tsp garlic powder
1 tsp crushed red pepper
Salt & pepper
1 bunch broccolini
Directions:
Preheat over to 450 and line a sheet pan with parchment paper. In a large bowl combine chicken, gnocchi and lemon slices. Drizzle with lemon juice, olive oil, and spices. Mix well, then pour onto sheet pan and spread into a single layer. Bake for 15 min, add the broccolini and give everything a stir. Bake for another 15 minutes or until the chicken is cooked.
