If you don't mind using a 1/2 cup of tequila to marinate, then you've just landed on your next dinner idea. This recipe is extremely easy and only requires you to cook chicken, while the rest is just assembling. It takes about an hour to make, which includes the marinating time.
The smell of tequila and lime was wonderful both during the marinating period and while cooking. The chicken came out nice and juicy with a tangy flavor and mixed well with the suggested toppings I have listed below. Serve with a margarita or two and you'll have a very satisfying dinner!
Ingredients:
1/2 cup tequila
1/4 cup lime (3-4 limes)
2 garlic cloves, minced
2 jalapenos, 1 chopped and 1 sliced
2 tsp salt
3 chicken breasts
1-2 tbs canola oil
10-12 tortillas (I prefer corn or 1/2 corn and 1/2 flour)
Topping suggestion: red cabbage, shredded cheese, cilantro, sour cream
Directions:
In a large ziplock back combine tequila, lime, garlic, chopped jalapenos and salt. Add chicken and marinate for 20 minutes or up to 1 hour, then discard the marinade. In a large skillet, heat oil on medium-high. Add chicken and cook until browned and fully cooked through (this took about 15 minutes per side for me), then thinly slice. To make tacos, layer chicken with your favorite toppings between tortillas.
