This chili will warm your heart! It's so good and different from "regular" chili AND it's good if you're on a budget because you really only need 5 ingredients. You might be thinking - how is this a chili? What makes a chili, a chili?
Well, after some digging I have come to the conclusion that no one knows what makes a chili, a chili. I finally had to resort to the actual definition of a chili, which is "a thick sauce of meat and chiles" (Merriam-Webster). According to that definition, what I'm about to show you is not an actual chili... But you know what? I don't care. It's delicious and that's all that matters.
While there are only 5 required ingredients, I have been told that avocado really pulls this recipe together (also cilantro and shredded cheese). I like to add avocado right before serving it, otherwise the avocado begins to disintegrate.
Ingredients:
4 cups shredded chicken breasts (about 3-4 chicken breasts OR 1 whole rotisserie chicken)
6 cups chicken broth
2 15oz cans cannellini beans, drained
2 cups salsa verde (I like Trader Joe's brand)
2 tsp cumin
Optional toppings: avocado, shredded cheese, sour cream, cilantro, scallions
Directions:
If using chicken breasts: bring a large pot of water to a boil. Cut chicken into large cubes and boil in water until cooked through. Strain and shred chicken with 2 forks. In a clean large pot, mix broth, beans, salsa, cumin and chicken in and bring to a boil. Cook until boiling, about 5 minutes, stirring occasionally. Serve hot and top with your favorite toppings.
