Avocado Egg Bowl


If you're like me, then you're always hungry. Always. It's been a struggle to find a snack that can get me from breakfast to lunch, and from lunch to dinner that isn't a cookie or something sweet. Granola bars and fruit just don't do it for me. Well, I have some good news for you... this avocado egg bowl is sure to satisfy those "between meal", leaving you feeling full and satisfied. The best part? It takes 10 minutes or less to assemble.

Ingredients:

2 hard boiled eggs

1/2 avocado, cubed

1 tbs red pepper, finely chopped

1 tbs red onion, finely chopped

Salt & pepper

Directions:

Boil the eggs in a small pot of water with 1 tbs of white vinegar (this makes them easy to peel) for 7 minutes or to your liking. Cool the eggs, peel, and dice. Mix all ingredients together in a small bowl and season with salt and pepper. Enjoy!
