Yumm. If you’re looking to freshen up your salad, look no further. This lemon vinaigrette is light and fresh, and a perfect compliment to a nice juicy steak. This recipe makes about 3-4 servings, so I recommend doubling it if you eat a lot of salad.
Ingredients: ¼ cup fresh lemon juice 3 tbs olive oil 1 tbs honey mustard 1tsp lemon zest salt & pepper to taste
Directions:
Place all ingredients in a small bowl and whisk until combined. Use immediately or refrigerate for later use. This dressing can last a week or two, but the ingredients may separate so just give it another whisk before using.For the salad, I used arugula, red bell pepper, red onion, and later added sliced avocado.
